Our heat-treated flours provide a validated low-micro solution for ready-to-eat batters and inclusions, and natural alternatives to chemically-modified starches. We maintain successful long-term relationships with our customers based on reliably consistent product, devoted service, and a commitment to mutual respect and trust. Our mills are located in Teutopolis, IL, Hopkinsville, KY, and West Harrison, IN, all in the lower Ohio River Valley. Our specialty line of all natural Heat Treated (HT) flours replace chemically modified starches, providing critical attributes needed for thermally processed foods as well as dry mixes. Our stabilized germ can replace chemically defatted wheat germ and a new natural process perfectly mimics chlorinated cake flour. Star of the West Milling Company has continued to grow in the past five decades. Expanding from one mill to today's five flour mills in four different states and 27 country elevators handling corn, soybeans and wheat while processing edible beans and providing local farmers with their crop inputs. The daily flour milling capacity now stands at 33,500 cwts, making Star of the West the 11th largest miller in the United States.
