SACRAMENTO, CALIF. — New almond flour from Blue Diamond Almonds Global Ingredients Division is available in three options. Extra fine natural maintains a natural light tan color. Extra fine blanched has a powder-like consistency and works well in such applications as delicate cookies, bread and cakes. Fine blanched toasts to a rich golden color.
Each quarter cup serving of the almond flour contains 6 grams of protein, 3.5 grams of fiber and 75 mg of calcium, said Bill Morecraft, general manager of Blue Diamond Almonds Global Ingredients Division.
“Additionally, almond flour is low on the glycemic index, is naturally gluten-free and a great food source of antioxidant vitamin E,” Mr. Morecraft said.
Almond flour in crackers helps them stay crispy longer, according to Blue Diamond. Almond flour also may be used in coating applications for fish and chicken and as a thickening agent for sauces and soups. Blue Diamond manufactures the almond flour at its facility in Turlock, Calif.
