SÃO PAULO, BRAZIL — Biorigin, based in Brazil, will present two new ingredients, BioSavour and Biogard D, at the Institute of Food Technologists’ annual meeting and exposition July 11-14 in Chicago.
BioSavour, a natural flavor, provides a mild, natural, clean flavor delivery and enhancement, according to the company. It has been shown to reduce sodium content in applications, deliver umami flavor and enhance specific flavor notes. Biorigin at I.F.T. will sample a non-alcoholic Bloody Mary drink that uses BioSavour to reduce sodium content by 60%.
Biogard D delivers “clean label” cultured dairy notes normally associated with aged cheeses, according to the company. Because of its organic acid composition, Biogard D helps to inhibit yeast and mold in baked foods and other applications. Biorigin will include Biogard D in cream cheese samples at I.F.T.
