NEW YORK — Mélange Bakery Cafe, a 24-hour production bakery, has opened in United Airlines’ Terminal C at Newark Liberty International Airport in New Jersey. More than 3,000 items are created from scratch daily at the bakery.
At full capacity, daily production at Mélange can comprise more than 1,000 croissants, assorted pastries and buns; more than 1,200 hand-rolled New York-style bagels (including rainbow bagels); more than 600 muffins; more than 200 hand-crafted chocolate bars; more than 75 cupcakes; 12 types of macarons; 10 varieties of donuts; and 6 varieties of sweet and savory eclairs.
Chef Jacques Torres, known for French pastries and chocolates, consulted on the concept.
“There is nothing like the smell of fresh baked goods coming out of the oven to bring a smile to your face,” said Gavin Molloy, vice-president of corporate real estate at United Airlines. “With Mélange, our Newark customers have the opportunity to indulge in fare from one of the world’s best pastry chefs — either as a pre-flight treat, a to-go option to enjoy inflight or even as a quick pick-me-up upon arrival.”
OTG Management, which partnered with United Airlines on the project, has enlisted Valrhona Chocolates to provide ingredients for the bakery cafe’s hand-crafted chocolate and bonbons.
