The YOGA Flex from Moline Machinery is a portable stress-less dough former that provides the flexibility to use multiple formers on a single sheeting line. Four rollers gently knead and tamp the dough with minimal energy transfer, which produces the ­open-grain structure artisan bakers require. The unit is available in several sizes to produce dough sheets from 10 to 44 in. wide and 0.25 to 1.75 in. thick. Production rates range from 1,000 to 15,000 lb of dough per hour.
