PARKER, COLO. — Carol J. Pratt, a nutritionist with extensive experience in the grain-based foods industry, has been named as a dietetic consultant to the Wheat Foods Council.
Ms. Pratt, who is the principal of CJP Consulting L.L.C. in Portage, Mich., has joined the W.F.C. following the resignation of Marcia Scheideman as president and will be working with the group "until a replacement can be found to fill the president’s position," the council said. The group will hold a strategic planning session Oct. 7-8 in Kansas City to explore its plans going forward.

She later was transferred to Battle Creek, Mich., where she was responsible for nutrition labeling compliance for all U.S. products. With the acquisition of The Keebler Co., her nutrition and regulatory responsibilities expanded further.
In addition to the W.F.C. board, Ms. Pratt represented Kellogg on a working group of the Grocery Manufacturers Association and the U.S. Department of Agriculture Food Industry Roundtable.
Ms. Pratt is a graduate of Cornell University with a bachelor’s of science degree in human nutrition and food and a master’s degree in food science with a minor in microbiology.
