SONOMA, CALIF. — The Bread Bakers Guild of America will sponsor “Introduction to Artisan Bread” at the San Francisco Baking Institute on June 19-20. The baking education class is part of The Guild’s 2010 Master Class series, “The World’s Fair of Bread.” It will provide an overview of the basic skills and techniques necessary to produce classic baguettes and naturally leavened bread.
Miyuki Togi, who teaches bread, Viennoiserie and pastry courses at the San Francisco Baking Institute and is the production manager for Thorough Bread and Pastry, will lead the course. She will teach students how to shape, score and bake artisan bread and will compare the flavors and textures created by different ingredients, mixing techniques, and fermentation and retarding methods.
