Johnson & Wales University’s annual event brings together scholars, agriculturists, millers and bakers.
 

CHARLOTTE, N.C. — Puratos for the second straight year will be the presenting sponsor for Johnson & Wales University’s annual International Symposium on Bread, which is scheduled for April 26-28 on the university’s Charlotte campus.

Scholars, authors, agriculturists, historians, media, millers and bakers from the United States and Europe attend the event. Peter Reinhart, a faculty member at Johnson & Wales and author of “The Bread Baker’s Apprentice,” will curate the symposium. This year’s symposium will feature two optional bread labs on April 28.

“Last year, some of the biggest names in the industry gathered to initiate an important conversation about the issues and opportunities we’re facing,” Mr. Reinhart said. “This year we plan to take it to the next level.”
