A combination of steaming and milling yields the minimally processed, clean label flour. Steaming deactivates the enzymes, stabilizes the protein and oil, and results in a pleasant, neutral flavor. The chickpeas may be partially dehulled, but most of the hulls are left in the finished product for their extra fiber.
