LENEXA, KAS. — New hydrated ancient grains pair the convenience of soaked grains with the ancient grain trend, according to Corbion Caravan, Lenexa. They contain amaranth, quinoa and chia, all high in protein. They may be added to current bread formulas and on top of current formulations.
Hydrated ancient grains contain a blend of hydrated and cooked (soaked) seeds and grains.
“Consumers are concerned about the impact of processed foods on their health,” said Carrie Johnston, product category manager. “Hydrated ancient grains are less processed and a key way to meet the demand for healthier bread products.”
