In 1883 Herman Levi and Jacob Loew founded Capitol Milling Company to mill flour on a large scale in the Los Angeles area. In 1999 Capitol Food Company was established, and today the Levi and the Jensen families continue to provide bakers and food purveyors with the highest-quality products nearly 140 years later.

Siemer Milling Company processes soft wheat into a variety of food and feed ingredients: flour for breadings & batters, crackers, baking mixes, cookies, southern-style biscuits, and pretzels; bran for baked product inclusions; and wheat germ. Our heat-treated flours provide a validated low-micro solution for ready-to-eat batters and inclusions, and natural alternatives to chemically-modified starches. We maintain successful long-term relationships with our customers based on reliably consistent product, devoted service, and a commitment to mutual respect and trust. Our mills are located in Teutopolis, IL, Hopkinsville, KY, and West Harrison, IN, all in the lower Ohio River Valley. We employ 190 persons, buy 28.5 million bushels of wheat each year from local growers, and produce 850,000 tons of wheat products — all of which make significant contributions to the economies of our communities.

Star of the West Milling Company has continued to grow in the past five decades. Expanding from one mill to today's five flour mills in four different states and nine country elevators handling corn, soybeans, processing edible beans and providing local farmers with their crop inputs. The daily flour milling capacity now stands at 19,900 cwts, making Star of the West the 17th largest miller in the United States.
